Finally I found a recipe I liked on an Estonian website. It was a basic guide for me however I made some changes; I used more coconut and for the seeds I added a seed mix and I used brown sugar for my cookies. The dough came out very thick and crumbly so I added a bit of milk as well, otherwise the food processor wasn’t able to mix it. After baking I wanted to taste a cookie while it was still hot. It was so crumbly and broke in pieces in my hand so I let them cool down, now the cookies a beautiful and do not break in pieces so easily – still lovely though.
The original recipe calls for ingredients:
150 g sunflower seeds
100 g grated unsweetened coconut
4 tbs sugar
50 g butter
1 egg
1 tsp baking powder
1/4 tsp salt
Method:
1. Put sunflower seeds in a food processor and work with a knife blade until ground.
2. Add all the other ingredients and work until the mix is smooth.
3. Form 1 inch balls using hands. Cover a baking tray with baking paper. Put the dough balls on the baking paper (and flatten them with fork). Pre-heat the oven to 175 degrees. Bake 20 min. until the cookies are golden brown.
4. Let the cookies cool down and enjoy!
Mõnusad jahuvabad küpsised! Retsept oli orientiiriks ees, kuid koguseid muutsin vastavalt oma võimalustele. Erinevusena kasutasin 200 gr. kookoshelbeid, 100 gr, erinevate seemnete segu, pruuni suhkrut ja kaht muna, muus osas järgisin retsepti. Segu tuli väga tihke, seetõttu lisasin veidi piima, et üldse annaks segada. Kätevahel sain ikka pallikesed vormitud. Peale küpsemist olid nad küll väga pudedad, maitstes lagunes küpsis näpuvahel pudiks, Peale jahtumist on kõik korras. Nämma :)
